A stunning, washed Gesha from a producer/Q-grader extraordinaire.
Only intensely red (ripe) cherries are harvested, after which they are floated/sorted for defects and disinfected with ozonated water. The cherries are then pulped and transferred to a bioreactor, which is filled with ozonated water and a 10% mosto solution (fermentation starter from a previous batch of this varietal). The reactor is saturated with CO2 and held at a constant pressure of 1.5 bars for 48 hours, during which temperature, pH, TDS, Brix, conductivity, alcohol content and microbiological activity are all monitored; every 12 hours a UV disinfection cycle is performed. Once all of the metrics are within spec, the coffee is washed and greenhouse-dried to optimal moisture on raised beds.
